Our partner is a renowned and prolific hospitality group with an established portfolio of innovative restaurants. We are now seeking a Head Chef with a strong background in leading contemporary, high-volume kitchens, and fluency in modern Japanese cuisine, including sushi and sashimi.
The Head Chef will:
train and mentor the culinary team to understand and appreciate the ingredients, techniques, and flavours;
ensure proper preparation and staffing for each service;
execute dishes at a consistently high standard;
manage food & labour costs whilst setting and achieving financial targets;
foster an inspiring, positive, and productive work environment;
work closely with the FOH team to ensure seamless, exceptional service;
collaborate with the marketing team to promote the restaurant and showcase special events and offerings.
We seek individuals with:
a passion for Japanese cuisine;
exceptional knowledge of Japanese ingredients and flavours;
3+ years of Sous Chef/CDC/Head Chef experience in established, reputable restaurants in major cities (N.Y., L.A., Tokyo, London, Vancouver, etc.);
experience working in high-volume operations (150+ covers daily);
ability and passion for training, coaching and mentoring a diverse culinary team;
a knack for creating exciting dishes that appeal to a wide audience;
an innate pursuit of excellence and continuous improvement.
